【中文摘要】 紫甘薯属旋花科一年生草本植物,是新近开发出的一类优良特异的甘薯品种。紫甘薯花色苷(APSP)是从紫甘薯的块根中浸提出来的一种天然红色素,它无毒,无特殊气味,具有多重营养、药理和保健功能,是一种开发前景广阔的天然食用色素资源。 本文对APSP组分进行了研究,首先通过薄层层析实验选定以BAW体系为柱层析洗脱剂,然后对APSP进行分离纯化,得到两种相对含量较高的组分Ⅰ和Ⅱ,并对组分Ⅰ和Ⅱ进行了一系列结构鉴定实验。纸层析、紫外可见光谱及酸水解实验表明,组分Ⅰ和Ⅱ为被不同有机酸酰化的芍药素-3-槐糖苷-5-葡糖苷;质谱结构鉴定实验进一步鉴定出组分Ⅰ为含一分子咖啡酸和一分子阿魏酸的芍药素-3-槐糖苷-5-葡糖苷,组分Ⅱ为含一分子咖啡酸和一分子对羟基苯甲酸的芍药素-3-槐糖苷-5-葡糖苷。 为了研究APSP的抗氧化活性,本文采用鲁米诺化学发光法测定其清除O_2·~-、·OH和H_2O_2自由基的能力,采用FTC法测定了其抑制亚油酸脂质过氧化的能力,采用TBA荧光法测定了其对小鼠肝组织匀浆自发性脂质体过氧化的抑制作用及对Fe~(2+)-H_2O_2诱导的小鼠肝、肾、心、脾组织匀浆脂质过氧化的抑... 【英文摘要】 Purple sweet potato, convolvulaceae, was a special kind of sweet potato with mauve flesh. Anthocyanins from purple sweet potato(APSP), which were nontoxic and multi-functional such as nutrition, pigmentation, health protection, had broad future of development.
